The King’s Peas: Food Culture in the Age of Enlightenment

Meredith Chilton, Curator Emerita at the Gardiner Museum, traces the evolution of changes to food culture in France and England in the Age of Enlightenment. Increased growing seasons and the import and cultivation of new crops, innovations in stoves, exponents of vegetarianism and locally sourced diets—all led to profound cooking transformations and the development of new and desirable wares in silver and porcelain as consumer demand impacted the market.
